buffalo cauliflower bites
A healthy-ish twist on wings and just as delicious. Make this recipe at home if you're wanting a crowd pleaser and a slightly lighter take on the classic buffalo wings.
1 head cauliflower, cut into florets
2 large eggs
1 c water
1 c flour
1 c panko
1/2 stick butter
1/2 c Frank's redhot
1 dash Worcestershire sauce
1 tbs apple cider vinegar
1/4 tsp cayenne
salt to taste
Preheat oven to 400
Beat eggs and water in a bowl.
With 3 large bowls, make a 3 station breading assembly line with flour in the first bowl, the egg wash in the second bowl, and panko crumbs in the third bowl. place a parchment lined baking sheet and the end of the assembly line.
To prevent panko breaded fingers, use left hand to coat each cauliflower floret in flour then drop it into the egg wash, making sure not to touch the egg wash with your left hand. Using your right hand take the floret out of the egg wash, dropping it into the panko bowl, making sure not to touch the panko. With your left hand, cover the egg washed cauliflower floret with panko until completely breaded and place on the baking sheet. Repeat for all cauliflower florets.
Bake cauliflower for about 20 minutes, or until golden brown.
While cauliflower is baking, melt butter in a small pot under medium low. Add franks red hot, Worcestershire sauce, cayenne, cider vinegar, cayenne and salt and mix thoroughly.
Once cauliflower florets are cooked, place them in a bowl and toss in buffalo sauce. Serve and Eat immediately.
